燜牛腩十個步驟

(一)先開一煱凍生水,將整塊坑腩放入出水,再開火將牛腩出水約十分鐘;千萬不要熱水出水,會流失肉類的營養與及不清潔!

(二)洗淨個煱再放入你喜歡的調味品(咖哩粉、蘑豉醬、沙嗲醬、南乳及香料)、薑、蒜頭,開大火並將頭先的配料落在已有油燒紅的煱炒到有香味為止。

(三)將已出水的牛腩切件,放入煱中,再加上水,水量一定要比肉量多兩倍,以大火紅燒。

(四)待燒滾後,將火收至中小火,煱中水份及食物可以繼續燜便可。

(五)視乎煱中食物的份量,到了約半小時至四十五分鐘後,煱中水份至餘下一半,而且用筷子插入肉內,感覺大約已腍至五、六成,便是下一步的關鍵時刻了。

(六)沖乾淨半個細橙般大的「冰糖」,直接放入煱中;不怕增加甜味,反而加速肉類較腍,相信是因甘蔗的成份所產生的化學作用。

(七)繼續燜煱中的牛腩時,可同時放下蔬菜(薯仔、紅蘿蔔)一起燜;太早放薯仔會比肉類更快腍,最怕會吸乾煱中水份,如果喜歡放較腍的蕃茄,蕃茄可以同薯仔一起放,否則再等五分鐘再放,蕃茄的口感會好好多。

(八)上述由放冰糖的步驟至這一刻,時間約十五至二十分鐘,相信煱中的肉類已經全部腍了。

(九)最後加上洋蔥

(十)最後放入適合調味的鹽就可以上菜了。
