如何避免牛排煎得太硬

  1. 應選購厚而柔軟的牛排,若買到硬肉,就必須在熟醋和沙律油的混合液中浸兩三小時,使肉質變軟。
  2. 下鍋之前,先在砧板上鋪一塊布,再將牛肉放在布上,以空瓶子或刀背輕輕拍打,這樣牛排就更易咀嚼。
  3. 火侯是決定煎好牛排關鍵。必須把煎鍋燒熱,才放入牛排。而且需將正面先下鍋,等到煎成焦黃才翻身。到三分鍾時可加入一點牛奶,使牛排變嫩。
  4. 注意端鍋離火時,必須低於實際需要的熟度,利用餘熱把熟度補足。
